Create a versatile main ingredient with very little work! Beef Barbacoa can be used in tacos, nachos, enchiladas, burritos or as our youngest prefers all by itself. The flavor is amazing and the best part is it cooks up so easy in your crock pot!
Beef Barbacoa
INGREDIENTS:
Large beef chuck roast
2 cans chopped green chilis
1 onion diced
2 cans La Costena Chipotle Sauce
1 1/2 teaspoon garlic powder
1/2 cup beef broth
salt and pepper to taste
chopped cilantro
Generously coat the meat with garlic, salt and pepper and place in a crock pot.
Add the green chilis, onion, and cans of chipotle sauce.
Cook in the crockpot low for 6-7 hours
Shred the beef in the sauce and add the chopped cilantro
Add the shredded barbacoa to corn/flour tortillas OR add the shredded beef to nachos or burritos. I usually top all with Mexican cheese, diced onion, extra cilantro, lettuce, tomato and sour cream. Serve with black or refried beans and rice and salsa!
If you prefer a bit less zip, reduce the Chipotle Sauce to one can and go light on the cilantro.
